Savory Pumpkin Almond Sun Seed Butter

Nut Butters are SO easy to make and are the best accompaniment to a wide range of dishes, sweet and savory. I paired this savory nut + seed butter with deeply roasted carrots for a simple and nutritious dinner chock full of nutrients and healthy fats. This is a huge batch that will last myself + sister several weeks, but you can always cut the recipe and use an equal amount of each nut/seed. Note that a nut butter will yield approximately half the amount of nuts used in the recipe.

Yields: 4 cups

3 c Pumpkin Seeds

3 c Sunflower Seeds

3 c Sprouted Almonds

1 tsp salt

1 tsp cardamom

 

  1. Blend all ingredients in a high-speed blender until smooth
  2. Store in an air tight container at room temperature for 2-3 weeks, for optimal freshness.
